The magic lies in the Botrytis Cinerea, or 'Noble Rot,' which concentrates the grapes (primarily Sémillon and Sauvignon Blanc) to an extraordinary degree. The harvest is a grueling process of multiple 'tries' (selections), where pickers select only the shriveled, botrytized berries, yielding less than a glass of wine per vine on average. This low yield is the secret to its immense concentration and legendary complexity.
